Chocolate Covered Frozen Banana Bites!

There is an abundance of tropical fruit here in Penang, especially bananas. On every street corner you’ll see little stores and stalls for people selling bunches of these small and yellow fruit.  They are a lot smaller here compared to the ones back home, but they are just as tasty. One particular favorite treat here on the streets of Penang are fried bananas, or pisang goreng. They are SO yummy! Bananas have become one of our favorite dessert foods. Ever since we gave up ice cream, frozen banana treats have helped us through the withdrawals of that creamy goodness called ice cream. There are many ways to eat and enjoy bananas, but I have one quick and easy recipe that I found on Pinterest that never fails us. All you need is bananas, chocolate, and peanut butter-what could be better?! My wonderful mother-in-law sent me some of my favorite chocolate chips from Trader Joes, they’re dairy-free! But you can also use milk chocolate chips instead and they will turn out just fine.

We are off to Sumatra tomorrow and will be gone for about a week and a half! We are super excited to see and explore some of Indonesia. I have no idea what to expect in terms of finding animal-free food, it will for sure be an adventure. Stay tuned for lots of pictures once we get back.  But for now, enjoy some chocolate covered frozen banana bites!

2 medium-large sized bananas
1/3 – 1/2 cup chocolate chips
1/4 – 1/3 cup peanut butter (crunchy or smooth)
optional toppings (ie: chopped nuts, coconut flakes)
parchment or wax paper

Cut up bananas into good sized chunks, each banana should give you about 6-8 pieces. Gently melt chocolate chips and peanut butter in a small saucepan over low heat, stirring frequently (the chocolate will burn and get yucky if you are not paying attention!). Here’s the fun and potentially messy part: dip the bananas into the chocolate-peanut butter mixture and then place on the wax paper. I found using a fork to be the easiest way to do this and to tap off any extra chocolate. Feel free to drizzle extra melted chocolate-peanut butter over your bananas for more goodness! Sprinkle any toppings you wish to add and then place bananas in the freezer. They’ll be ready to eat once they harden (in about a hour) but they taste even better if you can wait overnight.  Enjoy!
