Easy No-Bake Energy Bites
Honestly, I don’t know what I would do without Pinterest. My husband would say the same thing, although he’s too embarrassed to admit it. I saw this pin and recipe floating around for months now and finally just had to try it.
I love these energy bites for 3 main reasons. First off, the wonderful thing about this recipe, like my no-bake granola bars, is that it is SO easy and versatile. You can add or substitute almost anything and they still come out chewy and yummy. Just add whatever you have on hand. They are also fast to prepare and easy to keep in the fridge when you need a quick pick-me-up! Secondly, I love these little bites of goodness because they are healthy and good for you! With the ground flaxseed, it’s a simply way to get in your omega-3 fatty acids. They are also loaded with fiber and protein, hooray! And last but not least, they are incredibly delicious and very addicting! These are a welcomed new staple in the Watkins house!
1 cup quick-cooking oats
1/2 cup peanut butter (or any other nut butter)
1/2 cup honey or agave
1/2 cup nut of your choice
1/2 cup ground flaxseed*
1/2 cup mini or regular size chocolate chips
a few sprinkles of cinnamon
1 teaspoon vanilla
*flaxseed can be easily ground in a coffee grinder

Mix all of the ingredients above in a medium size bowl until well incorporated. Let the mix chill in the refrigerator for 30 minutes. Once chilled, roll into balls and enjoy. It’s as simple as that! These store well in an airtight container and keep refrigerated for about a week.

I love no bake little bites..I always make these with almond butter. I have to try them with peanut butter! They look delicious!!
I bet almond butter would be so yummy! I can’t find any here in Malaysia, looks like I’m going to need to learn how to make my own!
I saw these on Pinterest too. They were great snacks right after I had the baby. It’s fun to mix it up and add different dried fruits, seeds and nuts. Yum!
